I used my basic scotch pancake recipe and adjusted it! Matthew described these vegan chocolate pancakes as delicious then paused and said ‘delicious is not a strong enough word!’ High praise indeed! Ingredients 100g plain flour (mine is gluten free) 60g caster sugar 1 tablespoon cocoa 100ml oat milk (other plant based milks should also work in this recipe) 1 flax egg (I tablespoon flaxseed mixed with 3 tablespoons water and left to stand for 5 minutes) oil for frying Instructions Mix together the flax egg and set aside for 5 minutes to thicken. Add the milk. In a separate bowl, mix the flour, sugar and cocoa. Add the wet ingredients to the dry and beat together until combined and smooth. Heat the oil in a small frying pan (or big if you want to do several at once) Add a tablespoon of batter and cook for a couple of minutes each side.
