I once read that a pasta sauce should be quick enough to make in the time it takes to cook the pasta. This creamy spinach and mushroom pasta with fake chicken is ready in 15 minutes!
Ingredients
200g pasta
1 tablespoon oil
1 small onion, diced
4 mushrooms, chopped finely
1 or 2 cloves of garlic, sliced or crushed
250g fake chicken chunks
250ml vegan cream
2 handfuls spinach, chopped if preferred
Method
Cook the pasta according to packet instructions.
Meanwhile heat the oil in a large pan and fry the onion for 3-4 minutes.
Add the mushroom and garlic and cook for 2-3 minutes until softened.
Add the fake chicken and heat through for at least 5 minutes.
Pour in the cream and add the spinach. Stir well to combine and bring to the boil.
Once the spinach has wilted (2-3 minutes), add the pasta and mix, then serve!
You could add any herbs of your choice and top with grated vegan cheese if you want.
I really loved the flavours and textures of this spinach and mushroom pasta. The vegan and gluten free alternatives available at the moment are wonderful for replicating and even improving recipes.
